Eryngium (Sea Holly) Dried

Sea holly is the architectural piece of the range. Each thimble-shaped head sits inside a ruff of sharp pointed bracts, which is the holly half of the name, and the whole thing carries a metallic blue-silver that nothing else here comes close to. The colour is not fixed either: cool steel-blue in daylight, silver-green in shade, deep purple-blue against something dark.

That metallic quality is the plant's own tissue chemistry rather than anything done to it. Eryngium develops it in response to sun, which is why we watch the field across the season and cut in mid to late summer at the point the blue has come fully forward through the heads and bracts. Cut at the wrong moment and you get a duller stem. These are Eryngium planum and E. alpinum from our own cutting field, air-dried slowly without heat, dyes or preservatives.

The stems dry rigid, close to woody, and hold their shape indefinitely where softer dried flowers slump. That rigidity is also what makes a single stem in a narrow-necked bottle work, because it stays exactly where you put it. The bracts are genuinely sharp, so handle by the stem. Keep it out of direct sun and the metallic colour holds for years.
